Homemade Gluten-Free Ravioli for Valentine’s Day! #weekendcooking @BethFishReads

Remember my Weekend Cooking post about the Cooking with Nonna class that my husband and I took in October, where we made spinach-ricotta ravioli, among other Italian dishes? Yesterday he put what we learned into practice and made two types of homemade ravioli for a belated Valentine’s Day dinner last night – sweet potato and goat cheese – gluten-free (made with Cup4Cup flour) and delicious. Served with homemade marinara sauce. Yum!

I wasn’t home and he didn’t think to take pictures of the ravioli production process, but here are two I took during our Cooking with Nonna class. (We are not in these pictures.)

We made regular pasta with Nonna, but we have pretty much converted our kitchen to be for gluten-free cooking, although we’re not on a gluten-free diet ourselves.

The recipe for last night’s ravioli came from the Gluten-Free Girl and the Chef food blog, although my personal Valentine’s Day chef  improvised on the fillings and made up his own variations.

He said it took him less than an hour to make the ravioli and have them ready and waiting in the fridge to be cooked for dinner. I expect it would take me longer. You might want to refer to the blog post from Shauna at Gluten-Free Girl for tips about having your ingredients on hand, too!

Wow. These look awesome. I’ve made pasta before (I have the rolling attachment for my KitchenAid) but never GF. One of my brothers is on a GF diet. I may have to try this for him.

They look just perfect, so I’m impressed that they’re GF, which is noted for being a bit harder to work with. Ravioli are fun to make, and especially to eat!

Making ravioli seems really ambitious. I think I’m too lazy. But if you make them, you get to try more kinds of fillings, don’t you?

I never thought to warm the bowl up first but that makes perfect sense. The ravioli looks wonderful!

The pasta looks fantastic! I took a pasta class once that was given to me as a birthday gift, and it was such one. Special memories, for sure.

Looks great, just wondering if the ravioli can be frozen? How much in advance can it be made? And the sauce?
