Virtual Texas & Tex-Mex Cuisine #weekendcooking

Massachusetts to Texas would be a 29-hour drive, so we decided to fly there for our virtual weekend trip to Texas.

It was a whirlwind trip, but we had good food and drink while we were there, and visited a variety of Texan tourist destinations.

We missed the live daily cattle drive in Fort Worth, Texas, so we’ll have to go again!

Texas is a huge state, so, of course, we couldn’t see all of it in one weekend. Plus, we were there to sample Tex-Mex cuisine as much as to sightsee!

Gluten-free banana muffins on our first morning. Bananas are not local to Texas, though, so this is not a Tex-Mex breakfast. Pantry cooking strikes again! 😉

When dining indoors these days, I still prefer an empty restaurant, even on a virtual trip!

And, of course, I took pictures of my plate, close up:

We should have had fresh corn tortillas, but this restaurant must have had overripe bananas to use up, because we had banana muffins at two different meals!

What puts the “Tex” in Tex-Mex? Take a crash course in the difference between the two from Spoon University. (I found out our eggs should have had orange cheese on them to be truly Tex-Mex, but they did have cumin seed, which I love.)

From The United States of Cocktails by Brian Bartels, I learned that the frozen margarita originated in Texas, so we would have to sample some frozen margaritas!

We had planned to watch “True Grit” on the flight to immerse ourselves in the Texas experience, but instead watched “Save Yourselves!”, which had nothing to do with Texas, but was still good!
