Cookbook Club: Healthyish by Lindsay Maitland Hunt #weekendcooking

I’m guessing that the cookbook Healthyish: A Cookbook with Seriously Satisfying, Truly Simple, Good-For-You (but Not Too Good-For-You) Recipes for Real Life byLindsay Maitland Hunt made a splash on social media when it came out in January 2019, but I missed seeing it until last month, when it was our library cookbook club’s main selection.

I must not be following enough foodies on Instagram, but I’m following Lindsay Maitland Hunt now!

Our cookbook club meeting was virtual,, so I didn’t get to taste any dishes other than the ones I made myself – which all came out great – but the photos from the other group members were mouthwatering, and the cookbook got rave reviews from everyone who used it. (Our alternate selection was The Vegetable Butcher by Cara Mangini, a topic for another post.)

Based on our discussion at the meeting, Healthyish might have been the most popular cookbook club selection of the year. A few of us want to buy our own copies, including me.. (Shh, don’t tell my husband!)

Healthyish doesn’t open flat except in the middle, but that’s a small quibble about an otherwise beautifully designed cookbook. There’s a full-color photo for every recipe, and several of us commented at our meeting that the food we made came out actually looking like the pictures! The Single-Serving Chocolate and Peanut Butter Cookie was the most-tried recipe, and it was a hit with everyone who did.

Author Lindsay Maitland Hunt packs a lot of recipes into Healthyish – all flexible and forgiving of variations for food preferences and special diets. There is even a Special Diets index that includes recipes and page numbers for the categories: “Gluten-Free”, “Dairy-Free”, “Gluten-Free, Dairy-Free”, “Gluten-Free, Dairy Free, Egg-Free”, “Vegetarian”, “Vegan”, and “Vegan, Gluten-Free”.

Lindsay Maitland Hunt is on a mission to help busy people attain balanced eating. As she says in her introduction to Healthyish:

“Healthyish recipes are about having the biggest, most delicious plate of food possible that incorporates vegetables and, yeah, some bacon. It’s a big, hearty, healthy bowl of food that doesn’t weigh you down. Food that makes you feel good, and not sad. That’s a balanced approach to eating.

I bookmarked several recipes to try, and tried almost all of them – although not all in time for the cookbook club meeting.
